detergent to remove old seasoning. I heated the pan until it smoked, added 1cm of high smoke point oil (I used peanut for one and soybean for the other) and waited for that to smoke before setting the timer (they say 1-2 minutes but I went for 5), waited for the pan to cool before using. I made crepes after and it didn't stick, I yeilded beautiful sears on protien and haven't had the need to scrape anything off it for months. Honestly, if I had followed the seasoning instructions properly, I could've enjoyed all the joys of owning a lighter cast iron pan. The handles don't get too hot unless it's on the stove for hours or its in the oven. Wish the small frying pan came with a lid, but the lids do heat up after time since the handle is metal. The pans are lighter than traditional cast irons and heavier than non stick pans and woks.

scrub with a scourer as needed. Use oil/butter to grease as required. Wash with hot water only usually, but will use detergent on occasion. If I won't be using them for a few days, I'll wipe out with oil.

Love them.

Unfortunately many don't know how to use it. The place I bought it from said I had to use plastic utensils (eyeroll)

more “lightweight” die cast iron pan for a while, but can’t find them in the market until I saw these, manage to get them with 70% off.

In summary:

Pros: + no nasty PTFE and PTFA Coatings which give you peace of mind + pan is able to withstand very high heat + much more lightweight than a full diecast iron pan (this one uses hard anodized steel substrate + stainless steel handles) + the riveted handle is sturdy and I don’t have to keep tightening then after a few weeks/ months + the based thickness is just right, not too thick like usual cast iron (which makes it really heavy) yet not too thin like those chinese/japanese cast iron wok which will warp after some time thus not suitable for induction / ceramic stove. + energy saving as it stores alot of heat, thus you only need to use medium heat to cook + metal utensil safe

Cons: - not as non-stick as the normal chemically coated non stick pan (One tip to increase it’s non stick property is to cook at low to medium heat. You can heat up the pan at high heat first, but before you put the food, turn them to medium heat. Works for me everytime) - you have to wipe them dry after washing and maintain the pan after use by coating them with oil. (For best non stick effect , use pork lard to oil the pan)

In summary, if you are looking for an absolute non stick pans, then these are probably not for you unless you can control the stove heat well based on the food you are cooking! If you are after a healthy pan and willing to learn to cook properly, then go for it!

until I got out strong cleaning products (never had to use anything stronger than soapy water and a microfibre cloth to clean it in the 4 years we have had induction top).

I have used Baccarat previously and this is the first time using it with the induction top. (I got a set of pots and pans with the purchase of the induction top which i have not had any problems with, but wanted a bigger size pan, hence the reason for the purchase).

Note- if its heavily discounted, it can't be all that good. For those who say that the people who have the problem didn't follow the instructions, you may be right in some cases as a lot of people probably wouldn't read them, but as someone who is in Quality Control, I follow instructions all the time and can safely say this product has an issue.

appropriate oil at all times and to treat this pan similar to iron cast. Maybe you didn’t hit the smoke point? I let it smoke for a bit, I didn’t stop when it just started to smoke. I wish the booklet would have given some examples what oils to use. But it is explained in their Youtube video, also by the Lady at House. It is not recommended to use butter or olive oil and why that is, its explained in the booklet. I assume this is one reason why I kept destroying my other expensive PFOA and Teflon-free pans after few years.

At the moment I am using a gas stove, I am preheating the pan for 2 minutes very slowly and gradually, as advised, then I add Rice bran oil or Coconut oil, wait until this is heated and then I start cooking. Its explained well, first, the pan needs to be evenly heated and the same with the oil as otherwise it wont be non stick.

Because I really wanted to try its non stick quality, first I made pancakes with blueberries and apple as this would be the best proof. I was so relieved when it was really 100% non stick. The pancakes were perfect too. In my other pans that blueberry juice would be hard to clean off, especially in enamel, but not with this pan. Easy to clean.

I don’t need to use my full flame, in fact low medium heat and with my egg medium heat is all it needs. I can see high heat would be too much and would burn. Last night I cooked Lemon Pepper Chicken with Risoni and again, non stick and really delicious. I am not claiming that the pan makes my food particularly nicer, maybe it does but it could be also because of cooking in these different oils!

You don’t even need that much oil to make it non stick as long as the pan and oil is hot. But you do need oil no matter what. I was testing around using too much, medium and last so little that I thought my egg will stick now, but it didn’t. I had issues first with the fact I shall not cook with high quality (higher smoking point) extra virgin olive oil. I don’t like the thought of highly processed oils and although I believe in the goodies using Coconut Oil ( I have to use refined CO as I don’t like the taste in my meals), still, there is so much conflicting information out there, that I am scared my LDL will rise but apparently the HDL will rise too making the ratio fine. And Rice bran oil isn’t a bad oil, I found Brown Rice oil which is only filtered once, so its not overly processed and certainly not hydrogenated.

Long story for someone who never writes reviews. But I couldn’t let these negative feedback's go. Its just not reasonable. I read the booklet 3 times to make sure I don’t miss anything. Hah! I obviously did everything right, It is a very good pan. In 3 years I ll come back as that would be the time to tell how long lasting this pan really is. But at least, and that was one reason for choosing this pan, this pan is made of steel and not aluminium. Even if the coating scratches there are no health concerns; absolute nothing bad can leach into my meals.

I am happy with it and look forward to cook again today. ;)

Love it! – I have had the small and medium skillet for a while now (over 12mths) use them often find them very versatile and easy to use and oven friendly. Reasonably nonstick depending on pan needing reseasoning. Love the products as at least you can scrub them and easy care. Every nonstick pan that I have owned eventually needs to be discarded no matter how much they cost.  Show details

Extremely disappointing – Despite strictly following use instructions recommended for this product, the non stick ability quickly failed. It is a disappointing fail of a product that should be of high quality with good performance. develop a slick 'non stick' layer, just like every other carbon steel pan. I have two frypans, the griddle and the saute pan. They are heavy but the handles do not get hot when cooking. The griddle grills my steaks, pork chops and salmon fillets perfectly. Gotta love being able to use any utensils on it, as well as not worrying about heat like a traditional non stick pan.

Worst pan I have ever used – I was given the pan as a gift for my birthday, i read the instructions and it sounded too good to be true, it was. I followed the instructions for seasoning the pan using high smoke point oil (rice bran) but It didn’t work. No matter what I cook in it it sticks, to the point I am considering throwing it away. What a piece of crap – Everything sticks... I followed the directions to a T and still they stick. I have 2 the larger one has now got black stuff such to it I can't get off. Save yourself the time and money and don't buy this shoddy product. They are in no way a premium product. Apparently they have a 20 year warranty... the base that's a quarter to a half inch thick bow like that? Three from Three Baccarat products purchased have been complete failures, all purchased from House. A bowed pan, a crooked/chipped magnetic knife block, and a knife that is the poorest quality copy of a real one I've ever seen. I wish I'd read reviews before making the purchase, which is what I do now with everything. Baccarat? You have to be joking. It's an absolute scam to be selling this stuff as merchandise and a terrible waste of resources as well as people's time/money.

like crap to a blanket – what a piece of crap, when I bought this frypan, said my tefal frypan started to stick and only had it 2 years, shopkeeper said I was lucky it lasted that long, they recommended this one, done every thing I was told to do to keep it non stick less than a year later cant even fry an egg let alone an omelette unless I want it scrambled, the store had it mark up with 70% off I can see why now, come back tefal all is forgiven. Show details

a stainless steel pan characteristic, everything sticks unless it’s soaked in oil or fat. Not what I was told when buying. I should hav bought a normal non stick and just been careful with utensils. Wouldn’t recommend it if ur looking for non stick cooking. Also I only used medium heat and the pan base is bowed, oil moves from the center to the sides so the food even sticks with oil in the pan then! Very crap product Pete Evans.

Pate Evans 30cm pan – We bought the 30cm large pan and is a dream to use. I can't believe so many people have said the pan sticks and is terrible. All I can say to this people,learn how to cook the pan is excellent,doesn't stick at all and if you follow the instructions you have an amazing pan working as good as the Teflon coated ones without the poisonous coating. Cooked my favourite asian pancakes on it. Turns out perfectly! – Took me some time to use it , as was procastinating on seasoning the pan. Love the fact it can take in hot fire as long as the pan is uniformly heated from small fire first, so it dosent wrap. So glad no more anti coating agent is going to get into my food !!

together with the reputation of a 'big' brand like Baccarat. No way no hell will I ever buy another Baccarat anything, and will tell anyone contemplating it not to throw away their hard earned money to on it either. Don't be fooled like I was that just because a 'well known' chef put their name to a product that it should be 'good' quality. I have bought those $12 pans from the supermarkets that have lasted double the distance than this Baccarat wok. Shame on you Baccarat. And as for that sad noob claiming that none of us can cook because we say Baccarat's stuff did not live up it its promise, learn some manners!

then you don't wreck the pan by scraping it off with a plastic spatula or scourer because it's not a coating that will rub off. I have bought far more expensive pans and they are no where near as good as these. I'm about to buy another.

Stay away from this pan – This pan is rubbish seasoned like recommended on first cook backen and eggs the pan warped pushing the eggs to the side. Centre of pan hot edges not which gives you an uneven cook edges of eggs burnt while other parts stay runny. Will return and get different pan.  Show details

Within the first few cooks it started sticking – Followed the instructions before use, never used olive oil but it the non-stick surface should be renamed to superglue stick surface. Extremely disappointed – I loved the look of my new frying pan first and second use pretty good, but then on I feel like throwing out the window my beautiful meals ruined. I am fastidious about following instructions as I am a keen cook and like to take good care of all my utensils! But it sticks like ..... so disappointed!
