Can this machine make sorbet and frozen yogurt?

Yes it can and does it fine, just a little bit slower to get the sorbet frozen. I use these machines very frequently and cant put this machine wrong.

Made my first batch of custard style icecream (chilled over night ) as per instructions . Even after 50 minutes in my new compressor Cuisinart machine the mix ( which was plain vanilla )was starting to liquify as it was being transferred into its storage container . It's a cool day here too . Most demonstrations of this procedure I've seen on line show a much firmer finished consistency which infer you can eat the product straight from the machine at this stage . However our 50 minute mix would flow off the spoon before you could eat it and a bowl full would be liquid before consumption ! Has anyone any thoughts or suggestions please?

Hi Vicki I've made lots of different flavours of ice cream in the machine now and they come out with very different consistencies at the end of the churn. Vanilla was fairly liquidy for me too. It was a while back but as I recall, it was kind of a soft serve consistency when it was still in the churn, but as I was transferring it, it was melting in the container and getting pretty runny. By the time I got the full container into the freezer I was sceptical about the soupy mess. It took about 5 hours to freeze up after that but it froze perfectly without icy bits, despite having been reduced almost back to custard. Other flavours freeze up more in the churn (esp chocolatey ones), and I've also noticed that the thicker you make the custard, the harder it freezes in the churn. So if you are hoping to eat it straight away, my tip would be to aim to get your custard as thick as possible. (also bear in mind that the thicker the custard, the less volume of ice cream you'll end up with). But I've come to the conculsion that it's not safe to assume I'm going to eat anything straight out of the machine, and that I should factor in 5 or so hours of freezing time afterwards before I have anything really scoopable. Just in case..

Many thanks Robin ! Would be interested to know if it's just us , or if anyone else has had the same results . As it was my very first attempt on my brand new machine I was wondering if it was something I had done incorrectly . Couldn't fault the flavour though ; it was fantastic , and , when frozen , like yours , was a good texture . However not quite as creamy smooth as I had expected but wasn't unrealistically expecting commercial quality !!

Would like to try the pistachio gelato next , but have been unable to find the liquid pectin the recipe calls for . Living in Tasmania we sometimes have difficulty obtaining less common grocery items . Perhaps someone else could help with that !
