I had the larger 20cm Chef's Knife in the Wolfgang Starke brand. These knives have a "through tang" blade, with steel from tip to top of handle. The mini chef size is not that common, but the 15cm size fills a gap in my kitchen knives, of which I keep only the essential sizes. The weight of the through tang offers good balance when cutting, and is more rewarding to use than hollow handled knives. My only disappointment is that House displayed the knife at half price, only to find out that the online price is half the price again ($79.90-store sticker is clearly misleading). Also, be extra careful during House sales, as the return/exchange conditions disallow change of mind, and as I found out, no refunds or exchanges once you make the purchase. The rules for purchasing online are also different from that of in-store, and the T&Cs are only on the website. As they admit-"Choose carefully". In my case, I was initially given the wrong knife, and had to plead my case to get the Wolfgang Starke. Despite all the hassle, it is an excellent knife...Made in China in very tiny letters (with German Steel in very prominent letters), but my experience now is that the Chinese are making very fine knives. I hoped to buy a Japanese knife, but will have to wait for a special birthday to get that wish fulfilled.
