The joy of cooking with a quality, always sharp knife is a joy to behold. And once you become proficient with it, you won't need all of those kitchen gadgets, you'll only need one - your SHUN. I used an inferior knife for 15 years and was driven crazy with bluntness. I wish I had parted with the cash years ago. I bought a second one, just so I'd never be without when one is unwashed. One hint, because of the sharpness of the blade, the tip is more delicate than say a Wusthoff, so don't chuck it into the sink.
