Why does the fruit and nut dispenser drop with a terrible noise apart from noise the machine on rapid bake for a plain white bread ? and why no mention of this in the instruction book? I would not have purchased this bread maker if I had seen it mentioned. The kneading noise is unbelievable. First bread maker was a Palasonic. My old machine was Panasonic so I have used bread makers for many years 23/3/25 3rd attempt small loaf on dark crust 170ml water. Crust more like light base still lighter .my son came round he looked in the machine and said the heating element is to high that could be reason the only top of the bread is being baked. Bread doughy once again come on Breville as the question or send a prepaid collection to pick the machine up and do some refunding of purchase price

Hi, I followed all the measures in the manual. The load finished small and dense. Do I need to add more water and less flour? Not sure as I am doing all exactly as the manual says. thanks

Did you put the yeast in ?

Yes. All in and with the manual measurements. I read in some texts that maybe I need to add 50ml more of water to make it less dense? … I am all new on this haha!!

I have just purchased the breville bakers dozen. Every loaf I make is doughy, that’s baking it straight away and on delayed start. Is it too much water and should I adjust it. The bread rises nicely.

I have had the same experience, its more trial and error, but hope this helps....Settings: Large loaf, medium crust, menu No.2 Lucke white crusty bread flour 500g....292mls water (I use filtered because I have it on tap) 1 3/4 teaspoons yeast. I also use the same recipe for delayed start. I find if it is still a bit doughy, try with 2mls of water less. It also changes texture if it is humid, sometimes my delayed start loaf comes out perfect with a smooth top, sometimes it's really rough, but the bread is still good to eat.

I use lucked mix , I do put oil in and salt too. Also as soon as I can when finished I get it out of the maker as the steam can make it doughy in the bottom.

Thanks. I will try trial and error. I do take it out straight away so that’s not the problem. Thank you for your replies.

I have recently purchased my Breville bakers dozen bread maker and my question is, I set the crust to dark but still has no colour, I’m using crusty white bread mix but still has no crust or colour, I have followed the instructions correctly but very disappointed. Thanks Shona

I fo get a crust and colour , but its not overly dark, but once finished baking i take it out as it can get soggy from moisture, or at least open the lid.

Try setting on bake and adjust cooking time

my machine does the same so when the machine has finished the full circle of cooking i change the mode to number menu 1 ( bake ) and cook the bread for about half hour and get a good crust.

Can you bake sour dough in this machine and can you use multigrain premix if so on what setting.

I am sorry, I have never baked sour dough but I am sure you can, if you have the recipe, and with the multigrain premix the instructions should be on the pack or ask the manufacturer, I have with the Laucke wholemeal....they gave me amounts for a smaller loaf...(only had to add slightly more water than Crusty white)..I would try that

Hi Marie - What menu do you use for your sourdough? I have tried Menu 2 & 3 and have been unsuccessful on both settings.

Hi, late to the party, but I find menu 1 on the darkest colour setting normally works well for me. I find the sour dough discard recipes work best.

I am sorry, I don't know, I have only used Crusty White and Wholemeal. You should be able to get that information from Breville or the I have asked Laucke bread flour...they are very helpful

How noisy is this machine? Thank you!

Deb A
Deb A

If you are using the delay start..ie..early morning when you are asleep, if the door is shut its fine, but of a day...not that noisy at all, we find it makes a better loaf when making it straight away..not delay start. Hope this helps....I love it
