I have just purchased this Breadmaker from Myer and noticed the manual has two versions. The version I got which is the same as the one you can download here on product review is not the same as one I have seen in some YouTube reviews. The one I want has many more recipes a different picture on the front as well, plus it has many more recipes, I’m especially keen on trying the Ciabatta bread but it’s only in the manual that I don’t have. Can anyone help me source a copy of this other manual. Thanks in advance for any help.
Try recipe "11 Italian", for which the ingredients match what google came up with as the basis for Ciabatta.
I've not tried it specifically, but have made the "9 French", which turns out with crisp crust as expected.

Hi everyone, I've Bought a Panasonic SD-ZB2512, 3 months ago and still the machine has not produced a decent loaf of bread. The bread half bottom is too dense and not edible and half top soft with holes. I have made at least 30-40 loaves of bread but nothing changes. I am using Laucke whole meal and crusty white premix flour. I've tried the recipes that came with the machine and also tried Laucke flour recipes and also I got a new yeast but the result still the same. I've got a replacement for it 2 weeks ago but nothing has changed. I had an older model of Panasonic for 20 years and it was great and never had any problem with it. I just got the new one because I want to make sourdough and whole meal bread with this. It cost me $500 with 3 years extra warranty and now I don't know what to do with it. Does anyone has any suggestions. I really appreciate your help.
Hi there Sarah. I have made about 30 to 40 loaves myself and all but the first one have been flawless. Using the same mixes too! For me and how I make it....flour first then water....I never follow the recipes. Always tweak it, a little more water than they suggest, like 10 to 20 ml. Only use the flat paddle.

Sarah, I picked up on Trent’s comment about using the flat kneading blade, which is the one intended for “normal” bread. The yeast is added during the kneading process from the top dispenser so, if you are using the Rye blade (with cut-outs) it may be that the flour/yeast mixture is not mixed properly.
If this is so then the yeast would stay mostly in the upper part of the mix and hence too much yeast in the top and too little yeast in the bottom. Extrapolating and this would result in the bottom half being too dense – and the upper being too yeast’ed (hence bubbly).
If you are using the proper (flat paddle) blade then it looks like there is something wrong with your particular model as I’ve been successful despite being very rough and ready with my process and using the cheapest ingredients.
Hi Marshall, Thanks for your answer, yes I am using the right blade. I have had bread maker for last 20 years. I bought the first Panasonic one for $230 and it was fantastic. It didn't disappoint me even once but this new one is the second one and is a piece of garbage I can say. They just made the look pretty. I wasted more than 10 kilos of flour and have to put up with my husband nagging all the time, thanks again I really appreciate it.
I would like to bake a sour dough loaf adding seeds. What number on the menu would you suggest so the seeds are mixed in.

Hi, I bought the Panasonic SD-ZB2512 about a month ago and have baked a couple of basic sandwich loaves. What I've seen is that the proofing time of 2hrs and sometimes more is too long for the bread, making bread that is spongy as opposed to fine bubbles that you might get at the supermarket. Is there a way to move onto the next stage of the program when you think its proofed enough? Or create a custom program where you can put your own timings in for each stage of the program?
Sounds like you just need to play with your yeast and water amounts. The machine is set to cook the way its designed so I personally wouldn't go and change anything. But try your different amounts as suggested and see how you go
There are no custom settings, try the rapid white instead, it’s a bit different to the normal.

Absolutely. If you make a large loaf, I find 1 slice cut in two works well for a normal size sandwich. This is seriously the best addition to our kitchen. Loaf baking as we speak!

Just received my new Panasonic SD- ZB2512. I have done a quick visual and build check the main lid seems to have a lot of play in it, is this normal or is mine faulty?
Ours does have a slight amount of play, not noticeably. Yours may have a fault.
If you mean when the lid is open it moves from side to side, then i think that's normal, mine does the same. when its closed it only moves very slightly.

Hi Philippe, we are regularly receiving stock but yes there are a lot of back orders out there so it will take some time to fulfil all of those orders for this great product.

Is there a plan to release the SD-ZX2522 model in Australia? It is a newer model with extra gluten free options and also pasta programs. Also has the newer touch interface.
It’s either on the roadmap for release or not. It’s a simple question.... no point referring to Media releases.
Hi Chris, as this point we don't have this model in Australia. Sorry but we aren't aware of any plans to bring this in, but it may change at any time. Sorry but our current line up doesn't do pasta programs

Whats the SD-ZB2512KST then?
The the SD-ZB2512KS IS NOT the SD-ZX2522. It has an updated touch control panel with extra programs including Pasta dough. It's been available in the UK/Germany for around 2 years.... makes no sense why they have multiple versions and not one global product set. Also comes in a tinted stainless construction... looks so much better. Go to UK Panasonic webiste to check it out.
Hi sorry for another question. I wanna know if this model offers manual setting allowing me to decide how long the kneading and fermentation go? Coz I’m interested in making dough for Chinese steamed buns and japanese buns like red bean paste buns. Wondering the maker can do it. Thanks a lot
Hi Tess, you would need to use the set menus. Best to look at the menus from 19 to 31 and determine which one suits your particular request. We would recommend using page 11 from the user manual for further assistance.

Hi, Love the bread maker we have had some success and a few failures of which the centre of the loaf is too doughy, have been using the Laucke Multigrain and Defiance White bakers flour using all the correct ingredients and correct settings. Any help would be appreciated. Thanks Andrew
Hi Andrew, it is difficult for us to give you advise here as to why the bread isn't rising as it should. We would recommend following the basic instructions in the user guide that provides the measurements for a loaf. We can also recommend our recipes you can find here external link
I have had my bread maker for a week, it worked perfectly. Today, I put it on number 1 program, the timer is working but nothing is happening. The tin is in correctly.
The Panasonic Operating Instructions Manual - Troubleshooting does show that '1' will appear on the display if there has been a power failure for certain amount of time. Othewise no idea Toni. Thanks Heather. It started after half an hour, I read that apparently it warms the ingredients before starting to mix. (Clever little thing) The days are cooler this week so I guess that must have been the reason. I'm so relieved.
