De Buyer Carbone Plus Round Frypan Questions & Answers
Hello there, I'm so impressed by all these reviews I want to run straight out and buy me a De Buyer! But I have to ask: how heavy is the pan please? My elderly mother will be using it and the scanpan skillet is about the heaviest she can lift. if someone could please give me an idea of how heavy the 24cm frypan is I'd really, really appreciate it! Thank you all so much in advance
just weighed a 26 cm stainless pan and 26 cm de buyer..............s/s was about 1.2 kilo and the de buyer about 1.8 kg.... i would think a 24 cm de buyer would be close to 1.5 kg or less as they are a thinner gauge steel....perhaps you could consider de buyer bluesteal pan as they are a lighter gauge

I have the 20cm and it weighs 1230gm. I am 70 years old and findthis one and the smaller ones manageable.
Thank you very much. I have decided on the slightly lighter De Buyer La Lyonnaise Blue Steel fry pan, which is only about 600gm.
These pans are quite heavy. I am a small woman and struggle with them even though I love them. De Buyer also makes the Lyonnaise line. They too are carbon steel but much lighter as are the Blue Force pans.
I tend to not use them so much as I'd like due to the weight.

What is "blue steel" range like? what are its benefits over all the others? its a flooded market and id appreciate all comments. ls the heating of the pans quick? are they apt for low heat cooking to conserve Gas ? are the sides of the deep pans heated evenly? And are they garanteed in writing non toxic? I need a piece of cookware that will have fexibility as I live in a small motor home and I do not have an oven,,

What is "blue steel" range like? -- I have one "Blue" piece. Fantastic quality and F&F. A pleasure to cook with. What are its benefits over all the others? -- other brands? Haven't tried them all. But I have been more than happy with de Buyer. I think the Carbone and Mineral B range are heavier gauge steel than the Blue range. I prefer the Carbone range for its extra heft. Thinner pans have more chance to warp if overheated (which means REALLY hot). Check deBuyer website for thicknesses.

Are the sides of the deep pans heated evenly? Yes, when used with an appropriate sized hob. Be aware of the edge's slope. The pan base may be a bit narrower than you think, so take that into consideration.
And are they garanteed in writing non toxic? -- I don't know. Ask the manufacturer. But there is no teflon or non-stick coating or aluminium.
