HI matador has two versions . Get the more expensive one with stainless baskets and proper black enamel coating. plus the matador has wheels smokey mountain does not
Just bought a catalyst pro and do you use heat beads or charcoal

Hi I have just purchased the Bullet Pro and used it at the weekend for the first time as a test run for a family gathering next weekend. I used it in smoker mode and cooked a pork leg bone out and did all the workings for cooking time & temperature. My problem was I was only just able to achieve 110 deg C and one te course of 6 or 7 hours used whole bag of charcoal (3.62 kg) I used water in the bowl as per instructions for smoking and am wondering whether the water somehow impedes the temperature rise to 125 - 150 Deg C Comments and suggestions would be welcomed

all vents full open. i only use proper charcoal if i can.
Also replace bowl of water with a thick sheet of foil a few layers. i find the bowl of water uses up all the heat. There are many videos on you tube about using these bullet smokers.
Ok thanks - I did have all bottom vents fully open and the top vent closed - I was going to open the top vent but didn’t as the temperature did not rise to more the a degree or two above 100 I was using good charcoal with wood chips embedded - all the water had evaporated by the end
Hi John. Use warm water instead of cold when bringing smoker up to temperature, all vents fully open, throttle bottom vents as you approach the target cooking temp to avoid overshoot. Heaps of useful Facebook groups to join for near real-time advice. I find that I need to top up the water for anything longer than 6 hours cooking time
