Hi Breboo, The BUDDY is a great bbq to roast in. Place a cake cooling rack onto the centre of the grill plate. Turn gas onto high and ignite. Shut the hood and pre-heat to 180 degrees C. Place a whole chicken onto a roasting dish containing 1 sliced onion, 1/2 bunch thyme and 6 flattened cloves of garlic. Brush the chicken with olive oil and a seasoningh of your choosing. Add a cup of chicken stock to the pan. Place into the Buddy onto the cooling rack, shut the hood and roast until you reach 75 degrees C. Use a temperature probe and place it in the joint where the thigh joint meets the breast. Baste every 20 minutes with the juices from the tray. delicious!
