Wiltshire Staysharp Questions & Answers
VerifiedI have a block with 5 knives from the 80’s I purchased in Germany. They have rosewood handles and the block has a sharpener in each space. They have been in storage for years. Do you have any tips for cleaning and restoring them?i can’t find a picture like them anywhere.
What is the blade angle for Wiltshire knives? I’m assuming it’s 20 degrees not 15 degrees like Japanese knives?
I'm sorry Peter I Didn't realise there was a difference in blade angles so I can't help you. I think if you contacted the distributor directly they would be able to help.
Can the scabbard be opened up with being damaged? I want to check the sharpener because my knife isn't sharpening
Mine does. I just take the white base off and then there are a couple of button type things that have instructions as to which direction to push. It may just need a clean.
Is it possible to purchase a new knife block with built in sharpener without the knives? Knives are fine, when I can sharpen them, but the sharpener seems to be worn out.
I have the same issue apparently they don't sell the sharpener separately.

Why have my two staysharp knife holders become very sticky whilst being stored in a cupboard. None of the other items in the cupboard have this issue.
Always store your knives in the holder after ensuring they are clean and completely dry.
Hi Betty, We suggest rubbing Eucalyptus Oil onto the sticky surface, allow it to sit for 5-10 minutes before wiping away with warm soapy water.

I have a Wiltshire stay sharp pair of scissors with a sharpening case. What I don't understand is how to sharpen the scissors. Are the scissors sharpened by just inserting the scissors into the case, both blades at a time (with the scissors closed)? Or do the blades need to be opened and inserted into the case one at a time? If so which way round do they need to go into the sharpening case?
The instructions on the packaging are really vague and do not explain this.
I would also really like to know the answer to this question! Agree the instructions on the packaging are very vague. Personally, I have been taking the scissors apart and inserting them one blade at a time, because I simply don't understand how they can be sharpened if the scissors are closed - but no idea if that's how they're intended to be used!
where can i buy a replacement sharpener insert for knife block
Good Afternoon Bernice Unfortunately the sharpeners aren't available individually . I do apologise for the inconvenience. Regards The Wiltshire team
Why wouldn’t the sharpener insert be available to replace? That seems silly. My knives are fine (love them), the block is fine. Only thing wrong is the sharpener insert finally wore out (to be fair I’ve had it for a lot of years). Seems ridiculous to have to buy a whole new set (mine was $80 when it was bought ages ago so imagine it’ll be much more now) just for the sharpener.
I agree with Nicole. I bought the whole thing for more than $800 CAD (on sale), and I am so very disappointed with the fact that the sharpening feature wore out in less than a year. I cook every day, and expected better than that for the price I paid.
Buy a sharpener for them
How do I remove the inner sharpener from the outer casing please? One of them won’t pull out. It’s the paring knife which is separate on its own. Thanks
Hi, can I purchase a new insert block sharpener for my timber block?
apparently not, from the response to Nicole C., above. I say toss the knives, and go with another manufacturer......just sayin'....
To what angle are Wiltshire knives sharpened?
I accidentally put the knife in upside down. Now it's stuck! Help to remove please.....
Hi Joyce - I did the same thing a while back - spray inside with WD40, leave for 5 mins then push pull till knife comes out - voila! - best to put red nail polish dot on top of sharpener - Regards, Di
Ive taken the insert out to clean and thought I would do it thoroughly and now its in pieces, is there rebuild instructions for the insert I noticed some bits were numbered and can sort of put it together but a actual instruction set would be nice.
How did you get the insert out? I can’t figure out how to get mine out. Thanks
